So with what we had from our CSA this week, I had this for lunch and dinner.
I used the greens, along with the radish and onion and topped it off with feta cheese and dressed it with lemon juice and oil. All in all, not a bad salad.
1/4 Feta cheese
Salt and pepper to taste
Juice of 1 lemon
Hearty drizzle of extra virgin olive oil
~Combine all and toss to coat with oil and lemon juice. Serve immediately.
